Man Pasand Halwa

White Lentils 2 cups
Khoya ½ kg
Sugar 2 cups
Milk 2 cups
Small Cardamom 3 – 4
Ground Nutmeg ½ tsp
Dalda VTF Banaspati 1 cup
Wash and soak the white lentils in 3 cups of warm water for one hour. Strain and add the nutmeg. Grind in a chopper.
Boil the milk and sugar in a pan. Let it simmer over low heat till it reduces to ¼ of the quantity.
Remove from heat and add the khoya and combine well.
Heat Dalda VTF Banaspati in a heavy based wok over medium heat, sauté the cardamom, almonds and pistachios.
Add in ground lentils and stir fry till golden.
Mix in the khoya mixture and sauté over high heat till golden brown, place over a griddle and turn the heat to low.
When the ghee separates, remove from heat and spread in a tray, let it cool for 10 – 15 minutes then cut into wedges.
