Cut into pieces and serve hot with or without ice cream.
Semolina 1 ½ cup
Baking Powder 1 ½ tsp
Sugar 1 ½ cup
Dalda VTF Banaspati 1 ½ cup
Ingredients for Orange Syrup:
Mandarin Juice ½ cup
Sugar ½ cup
Orange Essence 1 tsp
Peel the mandarins, separate the wedges and break into chunks. Sift the semolina and mix in the baking powder and mandarin chunks.
Beat eggs and sugar with an electric beater making sure to add the eggs one by one.
Fold in the semolina mixture with a wooden spoon, pour this mixture in a cake pan and bake in a pre-heated oven for 45 – 50 minutes at 180 degrees centigrade.
Remove the cake pan from the oven and let it cool completely.
As the cake cools, prepare the orange syrup. Cook the mandarin juice and sugar over low heat, avoid stirring, when the sugar melts boil the mixture over medium heat. Now simmer over low heat for 5 minutes. Add orange essence and remove from heat.
Remove the cake from the pan and brush it with the warm orange syrup.
