Slice the eggplant into four and leave the top part intact.
Mash the cottage cheese with a fork and add salt, pepper, dry herbs, coriander and green chilies.
Add Dalda Cooking Oil to make it a little moist.
Stuff the cavity of each eggplant with the cheese mixture and once done, wipe the eggplant with a wipe cloth so that it is clean.
Pre-heat oven at 200 degrees Centigrade.
Take a baking tray, grease it and place the cheese stuffed eggplants on it. Pour Dalda Olive Oil generously on top and bake it for 10-12 minutes, turning sides during the baking process once at least.
This dish is best served at lunch with a combination of creamy pasta and some nice citrus salad.
You can make green chilies or bell peppers in the same way; however, stuffing can be tweaked according to the taste and preference.
