Step by Step method

  • Step 1

    Blanch the prawns.

  • Step 2

    Heat pan and grease it with Dalda Olive Oil, sauté the prawns and season with salt and pepper.

  • Step 3

    Combine pine nuts, garlic cloves and basil leaves with 2 to 3 tbsp of Dalda Olive Oil in a food processor and pulse until coarsely chopped. With the machine running, gradually keep adding Dalda Olive Oil and blend until the pine nuts are finely chopped.

  • Step 4

    Transfer the pesto mixture to a medium bowl. Stir in grated Parmesan.

  • Step 5

    Season the pesto with salt and pepper to taste.

  • Step 6

    Add pesto sauce to prawns and stir well on high flame for another 2-3 minutes.

  • Step 7

    Serve it in a small bowl and with toasted crostini on the side or arrange crostini in a platter along with the bowl of pesto prawns and serve.

Tips & variations

  • Pesto sauce is readily available at many super stores, so if you aren’t in the mood to make pesto sauce, you can always buy it off the shelf!
