Step by Step method

  • Step 1

    Mix all ingredients of dressing, make sure all are mixed properly, add dressing ingredients to a pot and cook it on medium flame for 5-6 minutes and set aside. You may add more brown sugar if it is still relatively sour.

  • Step 2

    Put the Papaya in a freezer for ten minutes before grating it, grate it and add tomato, Basil leaves chili/cayenne and peanuts and mix it properly with a wooden spoon, refrigerate the papaya mixed with other ingredients before the salad is served.

  • Step 3

    Before serving, pour over the dressing, tossing well to combine.

  • Step 4

    Top it up with grilled chicken slices and serve.

Tips & variations

  • To make this salad a day or two in advance, combine all ingredients except tomatoes and dressing. You can then leave it covered in the refrigerator for a day or two. Add dressing and tomatoes just before serving.
