Step by Step method

  • Step 1

    Transfer to blender/food processor peaches, lemon juice and keep puree in the blender until ready to use.

  • Step 2

    In a sauce add cold water, and in a small ramekin mix gelatin with water and place in the ramekin on the eater, switch on the flame and cook it gently for 1-2 minutes until fully dissolved don’t overcook it.

  • Step 3

    Add gelatin mixture to fruit puree and blend it again. Cover with lid and refrigerate it until mixture begins to thicken.

  • Step 4

    Once puree starts to thicken, beat 1 cup heavy whipping cream until stiff peaks form. Fold whipped cream into fruit mixture, mixing until smooth. Divide evenly between 6 ramekins or serving glasses and refrigerate until set.

  • Step 5

    Garnish with mint and fresh cream if desired.

Tips & variations

  • You can make exact ripe with mango as well, just ensure that mangos are properly ripe ones.
